A fun way to surprise your favorite person on their birthday is by making them a stack of these Birthday Cake Pancakes. This festive and colorful treat is perfect for any occasion! It’s also a great make ahead breakfast that you can freeze for later!
You can serve these Funfetti Pancakes with either a vanilla glaze, or with powdered sugar icing and sprinkles. You can even top them with a cherry for the perfect touch!
This recipe is easy to make and will be a hit with everyone. Just whisk the dry ingredients together, then mix in the wet ones, then fold in the sprinkles. Then, you’re ready to go!
Start by combining the flour, baking powder, sugar, salt and cake mix. Then, add the butter and eggs. Once everything is well combined, stir in the vanilla. You may need to use a mixer for this, but it’s not essential!
Once the batter is completely smooth, you’re ready to pour it on a hot griddle. You want to cook them about a minute or two per side. They’ll be done when you see little bubbles forming on the surface of the pancakes.
Place a few drops of water on the top of each pancake before serving them to keep them from drying out. Once they’re cooled, you can store them in the refrigerator for up to 3 days.
You can also reheat your Denny’s copycat pancakes in the microwave for 30-60 seconds on high, or you can bake them in the oven preheated to 350F (177C) for 5 minutes. They’re delicious served with a scoop of vanilla ice cream, or you can pair them with some fried chicken!
If you’re looking for a healthier version of these Birthday Cake Pancakes, try replacing half the white flour with whole wheat flour. This will help you cut down on the amount of added sugar and fat in your pancakes!
I used a griddle to make these pancakes, but you can use a traditional pan as well. Just be sure to preheat the pan before pouring the batter on it.
The best griddle to use for these pancakes is one that’s a little larger than your regular sized pan. This way, you’ll have more room to cook your pancakes without worrying about them spreading too much or not cooking all the way through.
When you’re ready to serve your pancakes, arrange them on a cake stand or shallow plate. Then, drizzle a small amount of the vanilla glaze on each pancake and let it drip down the sides. You can also sprinkle more funfetti on top for extra sparkle!
Don’t forget to serve these Birthday Cake Pancakes with a nice dollop of whipped cream and sprinkles. It’s a perfect breakfast treat that will make your special someone feel like a kid again!
